Yay! My cookbook, Seriously-Super-Salads! A Delightful Salad Adventure Awaits!, is out through the Blub On-line Book Store:

Salads are healthy and versatile. You know how they say "you can make anything into a musical" (Evita, Cats, Sweeny Todd, Bye Bye Birdie, Human Centipede: The Musical). You get the idea, anything can be a musical, some are good, others, not so much. Same with salad. You can make anything into a salad. Be creative. Now, the salads in my new cookbook are all really good (no bias there!). But, my purpose is to influence creativity so that the reader starts to take their salad making a few steps further. Who knows, maybe there is a left-over-Thanksgiving-dinner-salad in your future! This book is a short and delightful trip through salad-wonderland!

Feta-Cucumber and Walnut Salad with French Dressing:

Ingredients:

  • 2-3 large handfuls of spring mix (size depending on how many you are making salad for)
  • 1 small cucumber, cut into slices, diagonally
  • 2 white mushrooms, sliced length-wise, plus a few small mushrooms for decorating
  • 5-6 grape tomatoes
  • 1/2 cup walnuts, coarsely chopped
  • 1/2 cup feta

Dressing:

  • 1/2 cup canola oil
  • 1/4 cup ketchup (preferably without high fructose corn syrup)
  • 3 Tbsps apple cider vinegar
  • 1 Tbsps sugar (adjust the sugar accordingly if you are using no-sugar-added ketchup)
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • a grind of black pepper according to taste

Mix all dressing ingredients together.

Mix 2-3 tablespoons of the French dressing with the spring mix, cucumbers and mushrooms. Sprinkle on top: walnuts, feta, and dot with grape tomatoes for decoration.
